These gluten free, dairy free chocolate covered dates are the perfect sweet treat for those with quite a few flavor filters! I’m always looking for new ideas of what to make for the people in my life who have food sensitivities and allergies. There are only so many GF baking mixes in the world, and brownies get old quickly.
That’s where these chocolate covered dates come in– they are SO easy and delicious, and can be whipped up in only 20 minutes. If you’re not worried about them being gluten or dairy free, no worries! You can use whatever type of chocolate chips you like. But if you are concerned about flavor filters, I can happily recommend Lankanto Chocolate Chips. Making these chocolate covered dates is a BREEZE. Melt dairy free chocolate chips, have some chopped nuts/coconut/topping of choice handy, and voila! These go so well with coffee (decaf for me, unfortunately) at the end of a game night. If you want to go the extra-extra mile, you could drizzle some caramel on these bad boys. YUM.

In a small mixing bowl, microwave chocolate chips and coconut oil in 30-second intervals, stirring in between cycles.
Dip dates in chocolate mixture, laying each flat on a sheet of parchment paper.
Right after laying each date flat, sprinkle with desired toppings and allow to harden.
After 10 minutes, the dates should be dry enough to transfer to a plate and serve. If not, feel free to place in the freezer for a few minutes before serving.
